A new master would probably look exactly like Grimm, and probably be called the same. Lv.4 Grimmchild looks very much like Grimm, and the whole "ritual" involves sacrificing the current Grimm to feed the Nightmare Heart whilst raising a new Grimm feeding on "the flames of a kingdom's fall".

However, she only disappears upon the defeat of Nightmare King Grimm if the Knight has already upgraded all three Fragile Charms and has listened to Leg Eater. Since you defeated and did not banish, she should remain until you have all 3 charms. As long as you didn't banish the Troupe, you can still upgrade them.
